Instructions
Toast the Bread
- o Toast the slices of sourdough bread to your desired crispiness. Set aside.
Prepare the Avocado
- o While the bread is toasting, slice or mash the avocado. Season with a pinch of salt and pepper for extra flavor.
Poach the Eggs
- o Fill a saucepan with about 3 inches of water and bring it to a gentle simmer (not boiling). Add the vinegar to help the eggs hold their shape.
- o Crack each egg into a small bowl or cup, then gently slide it into the simmering water. Poach the eggs for 3-4 minutes for a runny yolk or 5-6 minutes for a firmer yolk.
