- 2 cups cherry tomatoes (halved)
- 1 lemon (thinly sliced)
- 3 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper (to taste)
- Fresh parsley (chopped (for garnish))
Instructions
1️⃣ Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2️⃣ Prepare the Baking Dish:
- Arrange the halved cherry tomatoes and lemon slices evenly in a large baking dish.
- Drizzle with 2 tbsp olive oil and sprinkle with half of the minced garlic, oregano, salt, and pepper. Toss to coat.
3️⃣ Season the Cod:
- Pat the cod fillets dry with paper towels.
- Rub them with the remaining 1 tbsp olive oil and season with smoked paprika, salt, and pepper.
4️⃣ Assemble and Bake:
- Place the cod fillets on top of the tomato and lemon mixture in the baking dish.
- Sprinkle the remaining minced garlic over the fillets.
- Bake in the preheated oven for 20–25 minutes, or until the cod is opaque and flakes easily with a fork.
