  • 4 cod fillets (about 6 oz each)
  • 2 cups cherry tomatoes (halved)
  • 1 lemon (thinly sliced)
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and pepper (to taste)
  • Fresh parsley (chopped (for garnish))

Instructions

1️⃣ Preheat the Oven:

  1. Preheat your oven to 375°F (190°C).

2️⃣ Prepare the Baking Dish:

  1. Arrange the halved cherry tomatoes and lemon slices evenly in a large baking dish.
  2. Drizzle with 2 tbsp olive oil and sprinkle with half of the minced garlic, oregano, salt, and pepper. Toss to coat.

3️⃣ Season the Cod:

  1. Pat the cod fillets dry with paper towels.
  2. Rub them with the remaining 1 tbsp olive oil and season with smoked paprika, salt, and pepper.

4️⃣ Assemble and Bake:

  1. Place the cod fillets on top of the tomato and lemon mixture in the baking dish.
  2. Sprinkle the remaining minced garlic over the fillets.
  3. Bake in the preheated oven for 20–25 minutes, or until the cod is opaque and flakes easily with a fork.

5️⃣ Serve:

  1. Garnish with freshly chopped parsley and serve hot.
  2. Pair with roasted vegetables, rice, or crusty bread for a complete meal.
