  • 2 boneless (skinless chicken breasts)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 8 oz penne pasta
  • 1 small onion (chopped)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp smoked paprika
  • Salt and pepper (to taste)
  • Fresh parsley (chopped (for garnish))

Instructions

1️⃣ Cook the Chicken:

  1. Season both sides of the chicken breasts with 1 tbsp Cajun seasoning.
  2. In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the chicken and cook for 5–6 minutes per side until golden brown and cooked through.
  3. Remove from the skillet and let rest before slicing into strips.

2️⃣ Cook the Pasta:

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente.
  2. Drain and set aside.

3️⃣ Cook the Vegetables:

  1. In the same skillet, heat the remaining 1 tbsp olive oil.
  2. Add the onion, red bell pepper, and yellow bell pepper. Sauté for 4–5 minutes until tender. Stir in the minced garlic and cook for an additional minute.

4️⃣ Make the Creamy Sauce:

  1. Lower the heat to medium and add the heavy cream and chicken broth to the skillet.
  2. Stir in the remaining 1 tbsp Cajun seasoning, smoked paprika, salt, and pepper.
  3. Simmer gently, then add the grated Parmesan cheese, stirring until the sauce is smooth and creamy.

5️⃣ Combine Everything:

  1. Add the cooked pasta to the skillet and toss to coat in the sauce.
  2. Return the sliced chicken to the skillet and stir to combine and heat through.
