- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup dry white wine or seafood stock
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes (optional)
Herb Drizzle:
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- Zest of 1 lemon
- Juice of 1/2 lemon

Step-by-Step
Step 1: Prepare the Lobster Tails
Using kitchen shears, cut the top shell lengthwise down the center of each tail, stopping at the base. Gently lift the meat and rest it on top of the shell. Pat dry and season with salt and pepper.
Step 2: Sear the Lobster
Heat olive oil in a large skillet over medium-high heat. Sear the lobster meat, flesh side down, for about 2 minutes until lightly golden. Flip and cook for another 1-2 minutes. Remove and set aside.
Step 3: Make the Creamy Garlic Butter Sauce
In the same skillet, melt the butter. Add minced garlic and sauté for 1 minute until fragrant. Pour in the wine (or stock), simmer for 2-3 minutes, then add the cream, paprika, and red pepper flakes. Simmer gently for another 2 minutes until slightly thickened.
Step 4: Return Lobster to Sauce
Place the lobster tails back into the skillet, spooning the sauce over the meat. Cover and simmer on low for 3-4 minutes or until the lobster is opaque and cooked through.
Step 5: Finish with Herb Drizzle
Mix all herb drizzle ingredients in a small bowl. Spoon over the lobster tails just before serving.
