- 4 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup grated Parmesan cheese

For the Lasagna:
- 9–12 lasagna noodles (cooked according to package instructions)
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup ricotta cheese
- 2 tbsp fresh parsley (chopped (for garnish))
Instructions
1️⃣ Prepare the Shrimp Filling:
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add shrimp and cook until pink and opaque, about 3-4 minutes. Season with salt and pepper. Stir in chopped spinach if using. Set aside.
2️⃣ Make the White Sauce:
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to make a roux.
- Gradually add milk and cream, whisking constantly to prevent lumps. Simmer until thickened, about 5 minutes.
- Stir in Parmesan cheese, nutmeg (if desired), salt, and pepper. Remove from heat.
3️⃣ Assemble the Lasagna:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Spread a thin layer of white sauce on the bottom of the dish. Layer lasagna noodles, shrimp filling, dollops of ricotta cheese, and white sauce.
- Repeat layers, ending with noodles topped with a generous layer of mozzarella and Parmesan cheese.

- Cover the dish with aluminum foil and bake for 25 minutes.
