For the White Sauce:

  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Pinch of nutmeg (optional)
  • Salt and pepper to taste

For the Lasagna:

  • 912 lasagna noodles (cooked according to package instructions)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 2 tbsp fresh parsley (chopped (for garnish))

Instructions

1️⃣ Prepare the Shrimp Filling:

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  2. Add shrimp and cook until pink and opaque, about 3-4 minutes. Season with salt and pepper. Stir in chopped spinach if using. Set aside.

2️⃣ Make the White Sauce:

  1. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to make a roux.
  2. Gradually add milk and cream, whisking constantly to prevent lumps. Simmer until thickened, about 5 minutes.
  3. Stir in Parmesan cheese, nutmeg (if desired), salt, and pepper. Remove from heat.

3️⃣ Assemble the Lasagna:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Spread a thin layer of white sauce on the bottom of the dish. Layer lasagna noodles, shrimp filling, dollops of ricotta cheese, and white sauce.
  3. Repeat layers, ending with noodles topped with a generous layer of mozzarella and Parmesan cheese.

  1. Cover the dish with aluminum foil and bake for 25 minutes.
