  • 2 lbs beef stew meat or beef tips (cubed)
  • 2 tbsp olive oil
  • 1 large onion (diced)
  • 2 medium carrots (diced)
  • 3 garlic cloves (minced)
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp cornstarch mixed with 2 tbsp cold water (for thickening)

For the Noodles:

  • 12 oz egg noodles
  • 1 tbsp butter
  • Fresh parsley (chopped (for garnish))

Instructions

1️⃣ Sear the Beef:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the beef tips in batches until browned on all sides, about 2-3 minutes per side. Transfer to the crockpot.

2️⃣ Prepare the Base:

  1. In the same skillet, sauté the onion and carrots until softened, about 3-4 minutes. Add minced garlic and cook for 1 more minute.
  2. Add the sautéed vegetables to the crockpot.

3️⃣ Assemble the Ingredients:

  1. Pour beef broth, Worcestershire sauce, soy sauce, and tomato paste into the crockpot. Stir well.
  2. Add dried thyme, salt, and pepper. Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender.

4️⃣ Thicken the Gravy:

  1. About 20 minutes before serving, mix cornstarch and water in a small bowl. Stir the mixture into the crockpot.
  2. Let the sauce thicken while you prepare the noodles.

5️⃣ Cook the Noodles:

  1. Bring a pot of salted water to a boil and cook egg noodles according to package instructions. Drain and toss with butter.

6️⃣ Serve:

  1. Serve the beef tips and gravy over the buttered egg noodles.
  2. Garnish with fresh parsley for a pop of color.
