- 1 lb baby potatoes (halved)
- 3 large carrots (peeled and chopped (or 1½ cups baby carrots))
- 1 cup green beans (trimmed)
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional for spice)
🔹 For Garnish:
- 1 tbsp fresh parsley (chopped)
- 1 tbsp grated Parmesan (optional)
- 1 tbsp lemon juice (for freshness)
Instructions
1️⃣ Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
2️⃣ Prepare the Vegetables:
- In a large bowl, toss the potatoes and carrots with olive oil, garlic powder, smoked paprika, thyme, oregano, salt, and black pepper.
3️⃣ Roast the Potatoes & Carrots:
- Spread the potatoes and carrots on the baking sheet in a single layer.
- Roast for 25-30 minutes, tossing halfway through.
4️⃣ Add the Green Beans:
- Remove the baking sheet from the oven and add the green beans.
- Toss everything together and roast for another 10 minutes until the green beans are tender and the potatoes are golden brown.
- 5️⃣ Finish & Serve:
- Drizzle with lemon juice, sprinkle fresh parsley, and add Parmesan if desired.
- Serve hot as a side dish or a light meal!
