  • Salt and pepper (to taste)
  • 1 tbsp fresh parsley (chopped (for garnish))

For the Saffron Mash:

  • 2 lbs Yukon Gold potatoes (peeled and cubed)
  • 4 tbsp butter
  • 1/2 cup heavy cream (warmed)
  • 1/4 tsp saffron threads (steeped in 2 tbsp warm water)
  • Salt and pepper (to taste)

Instructions

1️⃣ Prepare the Saffron Mash:

  1. Boil the potatoes in a large pot of salted water for 15–20 minutes or until fork-tender.
  2. Drain and mash the potatoes until smooth.
  3. Stir in the butter, warmed heavy cream, saffron (along with the steeped water), salt, and pepper. Mix well until creamy. Keep warm.

2️⃣ Cook the Lobster Bites:

  1. Season the lobster pieces with smoked paprika, cayenne pepper, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the lobster bites and sear for 1–2 minutes per side until just cooked through. Remove and set aside.
  3. In the same skillet, melt the butter and add the minced garlic. Sauté for 30 seconds until fragrant.
  4. Return the lobster bites to the skillet and toss to coat in the garlic butter. Cook for another minute, ensuring the lobster is well-coated.

3️⃣ Assemble the Dish:

  1. Plate a generous serving of saffron mashed potatoes.
  2. Arrange the garlic butter lobster bites on top.
  3. Drizzle any remaining garlic butter sauce from the skillet over the dish.
