For the Saffron Mash:
- 2 lbs Yukon Gold potatoes (peeled and cubed)
- 4 tbsp butter
- 1/2 cup heavy cream (warmed)
- 1/4 tsp saffron threads (steeped in 2 tbsp warm water)
- Salt and pepper (to taste)
Instructions
1️⃣ Prepare the Saffron Mash:
- Boil the potatoes in a large pot of salted water for 15–20 minutes or until fork-tender.
- Drain and mash the potatoes until smooth.
- Stir in the butter, warmed heavy cream, saffron (along with the steeped water), salt, and pepper. Mix well until creamy. Keep warm.
2️⃣ Cook the Lobster Bites:
- Season the lobster pieces with smoked paprika, cayenne pepper, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the lobster bites and sear for 1–2 minutes per side until just cooked through. Remove and set aside.
- In the same skillet, melt the butter and add the minced garlic. Sauté for 30 seconds until fragrant.
- Return the lobster bites to the skillet and toss to coat in the garlic butter. Cook for another minute, ensuring the lobster is well-coated.

- Plate a generous serving of saffron mashed potatoes.
- Arrange the garlic butter lobster bites on top.
