Step 1: Prepare the Lobster

Thaw the lobster tails if frozen, and gently remove the shells by cutting along the back and lifting the meat out in one piece. Cut the lobster tail meat into 1-inch bite-sized chunks.

Pat the lobster pieces dry with paper towels to ensure they sear properly in the pan.
Step 2: Sear the Lobster Bites

Heat the olive oil in a large skillet over medium-high heat. When the oil is shimmering hot, add the lobster bites in a single layer, being careful not to overcrowd the pan.

Sear the lobster pieces for about 1–2 minutes per side, or until just cooked through and lightly golden. Remove them from the skillet and set aside.
Step 3: Make the Garlic Butter Sauce

Lower the heat to medium and add the butter to the same skillet. Once melted, stir in the minced garlic and sauté for 1 minute, or until fragrant and just starting to turn golden.

Add the lemon zest, lemon juice, parsley, chives, red pepper flakes, salt, and pepper. Stir well, then return the lobster bites to the skillet and toss to coat. Cook for another minute to reheat and absorb the flavors.
