  • 2 cups cherry tomatoes (red and yellow )
  • 1 bunch asparagus (trimmed )
  • 1 avocado (halved and pitted)
  • 2 tbsp olive oil (divided)
  • 1 tbsp fresh lemon juice
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Fresh parsley (chopped (for garnish))

Instructions

1️⃣ Prepare the Chicken:

  1. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Drizzle 1 tbsp olive oil over the chicken breasts and rub the spice mix evenly on both sides.

2️⃣ Grill the Chicken:

  1. Heat a grill pan or outdoor grill to medium-high heat.
  2. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  3. Remove from the grill and let rest for 5 minutes before slicing.

3️⃣ Grill the Vegetables:

  1. Toss cherry tomatoes and asparagus with the remaining 1 tbsp olive oil and a pinch of salt and pepper.
  2. Grill the vegetables on the same grill pan or outdoor grill. Cook the tomatoes until slightly charred and blistered, and the asparagus until tender with grill marks (about 4-5 minutes).

4️⃣ Assemble the Plate:

  1. Slice the grilled chicken and arrange it on a plate with charred cherry tomatoes, grilled asparagus, and halved avocado.
  2. Drizzle everything with fresh lemon juice for added brightness.
