  • 2 tbsp olive oil (divided)
  • 1 tbsp balsamic vinegar
  • 3 garlic cloves (minced)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • Salt (to taste)
  • 2 sprigs fresh rosemary (or 1 tsp dried rosemary)
  • 4 sprigs fresh thyme (or 1 tsp dried thyme)

Instructions

1️⃣ Prepare the Chicken:

  1. Rub the chicken breasts with 1 tbsp olive oil, oregano, basil, smoked paprika, garlic, salt, and black pepper.
  2. Let the chicken marinate for at least 15 minutes for enhanced flavor.

2️⃣ Roast the Tomatoes:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cherry tomatoes with 1 tbsp olive oil, balsamic vinegar, a pinch of salt, and a sprig of rosemary.
  3. Spread on a baking sheet and roast for 15-20 minutes, or until the skins blister and caramelize slightly.

3️⃣ Grill the Chicken:

  1. Heat a grill pan or outdoor grill to medium-high heat.
  2. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  3. Add the fresh thyme and remaining rosemary sprig to the grill during cooking for aromatic flavor.
