- 2 large chicken breasts
- 2 cups cherry tomatoes (mixed red and yellow)
- 2 tbsp olive oil (divided)
- 1 tbsp balsamic vinegar
- 3 garlic cloves (minced)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp smoked paprika
- ½ tsp black pepper
- Salt (to taste)
- 2 sprigs fresh rosemary (or 1 tsp dried rosemary)
- 4 sprigs fresh thyme (or 1 tsp dried thyme)
Instructions
1️⃣ Prepare the Chicken:
- Rub the chicken breasts with 1 tbsp olive oil, oregano, basil, smoked paprika, garlic, salt, and black pepper.
- Let the chicken marinate for at least 15 minutes for enhanced flavor.
2️⃣ Roast the Tomatoes:
- Preheat your oven to 400°F (200°C).
- Toss the cherry tomatoes with 1 tbsp olive oil, balsamic vinegar, a pinch of salt, and a sprig of rosemary.
- Spread on a baking sheet and roast for 15-20 minutes, or until the skins blister and caramelize slightly.
3️⃣ Grill the Chicken:
- Heat a grill pan or outdoor grill to medium-high heat.
- Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Add the fresh thyme and remaining rosemary sprig to the grill during cooking for aromatic flavor.
4️⃣ Assemble and Serve:
- Plate the grilled chicken and top with roasted cherry tomatoes.
- Garnish with extra fresh herbs and a drizzle of olive oil for a finishing touch.
