- Fresh parsley (chopped (for garnish))
Instructions
1️⃣ Bake the Potatoes:
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes, then pierce each several times with a fork.
- Rub with olive oil and season with salt. Place directly on the oven rack and bake for 50–60 minutes, or until tender.
2️⃣ Cook the Shrimp:
- While the potatoes bake, season the shrimp with salt, pepper, smoked paprika, and garlic powder.
- In a large skillet, melt the butter over medium heat.
- Add the shrimp and cook for 2–3 minutes per side, or until pink and cooked through. Set aside.
3️⃣ Prepare the Potatoes:
- Once the potatoes are done, let them cool slightly.
- Cut a slit in the top of each potato and fluff the insides with a fork to create a soft, pillowy center.
4️⃣ Assemble the Loaded Potatoes:
- Top each potato with sour cream, shredded cheddar cheese, cooked shrimp, crumbled bacon, and chopped green onions.
5️⃣ Garnish and Serve:
- Finish with a sprinkle of fresh parsley for a pop of color.
