For the Salad:

  • 1 cup quinoa (rinsed and cooked)
  • 1 cup cherry tomatoes (halved, mix of red & yellow)
  • ½ cucumber (sliced)
  • ¼ cup red onion (finely chopped)
  • ¼ cup Kalamata olives (whole or sliced)
  • ¼ cup feta cheese (cubed or crumbled)
  • ¼ cup fresh parsley (chopped)

For the Lemon Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

1️⃣ Cook the Quinoa:

  • Rinse quinoa under cold water.
  • Cook according to package instructions. Let cool.

2️⃣ Prepare the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.

3️⃣ Assemble the Salad:

  • In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.

4️⃣ Toss & Serve:

  • Drizzle with the lemon dressing and gently toss everything together.
  • Serve immediately or refrigerate for a chilled version.
