- 1 cup cherry tomatoes (halved, mix of red & yellow)
- ½ cucumber (sliced)
- ¼ cup red onion (finely chopped)
- ¼ cup Kalamata olives (whole or sliced)
- ¼ cup feta cheese (cubed or crumbled)
- ¼ cup fresh parsley (chopped)
For the Lemon Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp red wine vinegar
- 1 clove garlic (minced)
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper

1️⃣ Cook the Quinoa:
- Rinse quinoa under cold water.
- Cook according to package instructions. Let cool.
2️⃣ Prepare the Dressing:
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
3️⃣ Assemble the Salad:
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.
4️⃣ Toss & Serve:
- Drizzle with the lemon dressing and gently toss everything together.
- Serve immediately or refrigerate for a chilled version.
