Scale
For the Crust:
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
For the Cheesecake Filling:
- 3 8 oz packages cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 1/2 cups heavy whipping cream
For the Topping:
- 1 cup caramel sauce
- 2 fresh peaches (sliced (or canned peaches, drained))
- Whipped cream (for garnish)
Instructions
1️⃣ Prepare the Crust:
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the texture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator for at least 15 minutes while you prepare the filling.
2️⃣ Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
- Pour the cheesecake filling over the chilled crust, spreading it evenly. Chill for at least 4–6 hours, or overnight for best results.
3️⃣ Add the Topping:
- Once the cheesecake is set, pour caramel sauce over the top, letting it drip slightly down the sides for a beautiful effect.
- Arrange peach slices decoratively on top of the caramel layer.
4️⃣ Garnish and Serve:
- Add dollops of whipped cream around the edges for an elegant touch. Slice and serve chilled.
