For the Scallops:

  • 12 large sea scallops, patted dry
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • Salt and pepper, to taste

For the Creamy Cilantro Lime Sauce:

  • ½ cup heavy cream
  • ¼ cup fresh cilantro, finely chopped
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 small garlic clove, minced
  • 1 tbsp butter
  • Salt and pepper, to taste

1️⃣ Prepare the Scallops:

  • Pat the scallops dry with a paper towel and season both sides with salt and pepper.

2️⃣ Sear the Scallops:

  • Heat olive oil and butter in a skillet over medium-high heat.
  • Once hot, add the scallops and sear for 2-3 minutes per side until they develop a deep golden crust.
  • Remove from heat and set aside.

3️⃣ Make the Sauce:

  • In the same skillet, melt butter over medium heat.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Pour in the heavy cream, lime juice, and lime zest. Stir well.

4️⃣ Incorporate Cilantro:

  • Stir in the chopped cilantro and simmer for 2-3 minutes until the sauce thickens slightly.
  • Season with salt and pepper to taste.

5️⃣ Serve and Enjoy:

  • Pour the creamy cilantro lime sauce over the scallops and garnish with extra cilantro.
  • Serve hot with rice, pasta, or crusty bread!
