Ingredients

  • 1 tbsp olive oil
  • 1 lb sirloin steak (cut into bite-sized pieces)
  • 4 sausage links (sliced)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 medium onion (chopped)
  • 4 large eggs
  • 2 tbsp butter
  • Fresh parsley (chopped (for garnish))

Instructions

1️⃣ Sear the Steak Bites:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season steak bites with salt, black pepper, paprika, and garlic powder.
  3. Add steak bites to the skillet and cook for 2-3 minutes, turning to brown all sides. Remove from skillet and set aside.

2️⃣ Cook the Sausage:

  1. In the same skillet, add sliced sausage links and cook for 3-4 minutes until browned.
  2. Remove and set aside with the steak bites.

3️⃣ Sauté the Vegetables:

  1. Add chopped bell peppers and onion to the skillet.
  2. Sauté for 4-5 minutes, or until softened and slightly caramelized.

4️⃣ Cook the Eggs:

  1. Push the vegetables to one side of the skillet.
  2. Add butter, and once melted, crack the eggs into the skillet.
  3. Cook sunny-side up or to your desired doneness, seasoning with a pinch of salt and pepper.

5️⃣ Combine and Serve:

  1. Return the steak bites and sausage to the skillet, mixing gently with the vegetables to warm through.
  2. Serve hot, garnished with freshly chopped parsley.
