- 4 sausage links (sliced)

- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp garlic powder
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 medium onion (chopped)
- 4 large eggs
- 2 tbsp butter
- Fresh parsley (chopped (for garnish))
Instructions
1️⃣ Sear the Steak Bites:
- Heat olive oil in a large skillet over medium-high heat.
- Season steak bites with salt, black pepper, paprika, and garlic powder.
- Add steak bites to the skillet and cook for 2-3 minutes, turning to brown all sides. Remove from skillet and set aside.
2️⃣ Cook the Sausage:
- In the same skillet, add sliced sausage links and cook for 3-4 minutes until browned.
- Remove and set aside with the steak bites.
3️⃣ Sauté the Vegetables:
- Add chopped bell peppers and onion to the skillet.
- Sauté for 4-5 minutes, or until softened and slightly caramelized.
4️⃣ Cook the Eggs:
- Push the vegetables to one side of the skillet.
- Add butter, and once melted, crack the eggs into the skillet.
- Cook sunny-side up or to your desired doneness, seasoning with a pinch of salt and pepper.
5️⃣ Combine and Serve:
- Return the steak bites and sausage to the skillet, mixing gently with the vegetables to warm through.
- Serve hot, garnished with freshly chopped parsley.
