- 2 cloves garlic (minced)
- 1–2 red chilies (sliced (adjust for spice preference))
- 2 cups chicken broth
- 1 can (14 oz coconut milk)
- 200 g shrimp (peeled and deveined)
- 1 cup mushrooms (button or shiitake, sliced)
- 1/2 red bell pepper (thinly sliced)
- 2 tbsp lime juice
- 2 tsp fish sauce (or soy sauce for vegetarian option)
- 1 tsp sugar
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
1️⃣ Sauté aromatics:
- In a large pot, heat oil over medium heat. Add lemongrass, ginger, garlic, and red chilies. Sauté for 1-2 minutes until fragrant.
2️⃣ Simmer broth:
- Pour in chicken broth and bring it to a simmer. Let it cook for 5 minutes to infuse the flavors.
3️⃣ Add coconut milk:
