For the Oreo Crust:
- 1 ½ cups Oreo crumbs (about 16 cookies)
- 4 tbsp unsalted butter (melted)
For the White Chocolate Cheesecake Filling:
- 8 oz 225g cream cheese, softened
- ¼ cup granulated sugar
- ½ cup white chocolate (melted)
- 1 tsp vanilla extract
- 1 large egg
- ¼ cup heavy cream
For the Chocolate Ganache:
- ½ cup semi-sweet or dark chocolate (chopped)
- ¼ cup heavy cream
For Garnish:
- Whipped cream
- Extra Oreo cookies (chopped)
Instructions
1️⃣ Prepare the Oreo Crust:
- Preheat oven to 325°F (163°C).
- Mix Oreo crumbs with melted butter until combined.
- Press into the bottoms of a lined or greased muffin tin (or mini cheesecake molds).
- Bake for 5 minutes, then set aside to cool.
2️⃣ Make the White Chocolate Cheesecake Filling:
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Mix in melted white chocolate and vanilla extract.
- Add the egg and heavy cream, mixing until just combined.
- Pour over the pre-baked crusts, filling about ¾ full.
3️⃣ Bake the Cheesecakes:
- Bake at 325°F (163°C) for 15-18 minutes, until set but slightly jiggly in the center.
- Turn off the oven, crack the door slightly, and let them cool inside for 10 minutes.
- Chill in the fridge for at least 2 hours.
4️⃣ Prepare the Chocolate Ganache:
- Heat heavy cream until warm (but not boiling).
- Pour over chopped chocolate, let sit for 1-2 minutes, then stir until smooth.
5️⃣ Assemble & Garnish:
- Spoon ganache over the chilled cheesecakes.
- Pipe whipped cream on top and garnish with chopped Oreos.
